Executive Chef (20 years)

35 years as a chef, 20 years as our Executive Chef for all Brands and Adam’s right hand man. Marcos has been instrumental in developing all recipes with Adam since the first day we opened our doors and continues to do so today. he not only overseas our hot and cold kitchen but he also oversees our butcher shop where more than 40,000 lbs of fish is processed on a monthly basis.
